Improve your efficiency in the production of skewers by hand with these professional skewer making boxes.Professional BoxOur Skewer Making Kits are imported from Italy and includes top and bottom polyethylene lids with counter sunk skewer guide holes, polyethylene cage* with "top open" knife guides and a stainless steel pre-skewer.

Requirements for production of Arrosticini:

  1. Bamboo sticks (Pre-soaked) 25cm long and 3mm dia
  2. A long sharp knife. Recommend a 40cm + knife with 1mm depth from the handle to the tip.
  3. De-boned Lamb cut in layers roughly 2.5cm in depth

Loading, skewering and cutting is identical to home version production.

ARROSTICINI PRODUCTION BY HAND

Recommended method for catering / street market vendor / restuarants to produce skewers in volume.

Arrosticini are cubed small

The meat on the skewer should be approximatelly 14mm to 16mm in size for Arrosticini. Choose a box with the right cube size.

Hole Size

Bamboo Diameter must be thin

Check that your bamboo skewers are 3mm diameter else they will not go through the skewer hole guides.

Your Knife must not be tapered at the handle

A fillet or ham knife with 1mm thickness from the handle to the tip is needed to go through the guides. Knives that are 40+ cm long are also recommended.

Our boxes are solid built with open guides to allow the knife to come over the meat and allowing maximum loading into the cage.

 

Arrosticini Raw

Skewers this size may take between 5 to 8 minutes cooking time.

Raw Arrosticini

Arrosticini should have 20% to 25% layers of lamb fat mixed in. In the cooking process the fat provides the flavour and keeps the surrounding meat moist. Salt at the end of the cooking process maximises the flavour of the Arrosticino.

We have boxes that can go up to 2.8cm cubed skewers. However the number of skewers produced is reduced. Note that cooking time also varies as well.

Our largest cube size is 2.8cm and approximatelly 10cm in length on a bamboo skewer. A box with this dimension will produce 49 skewers at a time.
