Brescian Enclosed Charcoal Rotisserie

cooking-porkbelly.jpgKnown in Italy as "Lo Spiedo Bresciano" it uses hot coals to roast a variety of small meats.

Those who want to cook for large groups of friends can use this enclosed rotisserie which is capable of holding several spits and are turned by an electric motor.

The hotcoals go into a tray that runs along the front of the box, while the bottom of the rotisserie acts as a dripping pan, catching what drips from the spits above.

This method is both low and slow and you can baste without opening the box through the clever drip tray that sits above the spits.
